Meat Loaf Pie




Good morning to everyone;
Yes it is still cold on the Oregon coast but we will warm up a little bit later on today. Anyway last night I came up with this idea on what to do with hamburger and now I thought I would share it with you.
I call this meat loaf pie:
I used 2 pounds of ground round, as I have a teen boy. But you can use more or less
Mix the meat in a large bowl adding chopped onion, 1 small can of tomato soup, small can of mushrooms, seasoning salt, 2 eggs, 2-3 cups of Italian crushed bread crumbs or your choice of either oat meal, crushed crackers, other kinds of seasoned bread crumbs.
Add a little water and mix all together.
Add to to a large frying pan, pie pan if doing a smaller amount, kind of pat and make the meat form all together.
Now for the second part:
boil up some small red potatoes or potatoes that you like, another way can be to use instant potatoes especially the kind of instant potatoes that now come in the individual packets make by Idaho potatoes, those packets come in many varieties.
Make up the potatoes as you would normally and then top on top of the meat in your frying pan or pie pan. Smooth the potatoes all over the top covering the meat completely.
Bake in an oven 350 until done and until the potatoes turn a golden brown and look crispy at the edges. I would like to mention be sure to use a very lean ground beef when doing this as not to have all that grease.
One other thing you could do also is add a bit of your favorite shredded cheese at the last seconds before done and have melted cheese on those potatoes make this even more yummy.
